Stock your freezer with premium grass-finished beef. Order a whole, half, or quarter beef and enjoy quality meat raised right here on the farm.

How it works

1. Let’s connect
Let’s connect, so we know what you’re looking for and when you’d ideally like your beef. We’ll share what’s ready and when. Our beef is processed when the animals are ready, not on a fixed calendar. We butcher year-round, though there may be stretches lasting several months with no animals going to the locker.

2. Place your deposit
A $100 deposit is required to reserve your spot. Since we process beef at certain times of the year, we'll reach out to let you know what to expect for timing once your spot comes up.

3. We schedule and haul your beef
Within a few days after we take your beef to the processor, you'll receive an invoice showing the hanging weight and what you owe us. We ask that you make your payment as soon as you receive the invoice.

4. Contact the processor
Call the processor the week your beef goes to the locker in order to provide your cutting instructions. You can specify what cuts you want and how you would like them packaged. 

Some things to consider include: 

  • Steak thickness
  • Bone in or bone out cuts,
  • Specific cuts you want (brisket, short ribs, roasts, prime rib, round steaks, etc.), and 
  • Size of packages. 

If you have questions or need help deciding how to cut your beef or which cuts to choose, the locker staff does a wonderful job assisting you. Just give them a call!

5. Aging beef
Your beef will dry age (hang) for 14 days, unless you choose a longer or shorter aging period. This helps develop flavor and tenderness.

6. Pick up from the processor
About 16 days after we haul your beef, it will be ready for pickup. The processor will contact you when it's time.

You'll pay the processing fee directly to the processor when you pick up your beef.


How Many Cuts Can I Expect If I Order a 1/2 Beef?

A half beef typically includes a variety of cuts, and the actual quantities can differ based on the specific animal, your selected cuts, and the thickness at which the steaks are sliced.

**Double these estimates to figure what you would get with a whole beef and cut them in half to figure what you would get with a quarter beef.

Estimated Cut Breakdown

  • Chuck Roasts: about 5 (2–3 lbs each)
  • Arm Roasts: about 1 (3 lbs)
  • Rib Roasts: 3 good ones OR Rib Steak/Ribeye Steak (7)
  • Short Ribs: (this can be used for ground beef)
  • Brisket: whole or cut in half
  • Skirt Steak
  • T‑Bone Steaks: 8–10 cut OR have bone out for KC Strips and Filets
  • Sirloin Steak (bone in) or New York Strip (bone out): 8–10 cut
  • Stew Meat/Kabob: 4 lbs
  • Flank Steak
  • Round Steak/Swiss Steak: 6–8 cut ½ in. thick
  • Rump Roasts: 3
  • Ground Beef: 50–60 lbs (depending on size of whole beef; more if you want steaks, roasts, etc. ground into burger)
  • Soup Bones

How much freezer space do I need?

Freezer space needs change with the size of the beef you purchase. This chart shows an estimate of how much room you’ll want to have ready—whether you’re buying a quarter, half, or whole animal—so your beef fits comfortably and stays organized.

Processing & Cuts


The processor typically packages ground beef in chub bags and other cuts in shrink wrap, but butcher paper and vacuum sealing are also available for an additional cost.

Freezer is priced by the hanging weight. Final cost depends on the size of the animal and how you choose to have it cut, but it consistently comes out far more affordable than buying individual cuts at the store.
